Craft 260 Bistro is the brainchild of three local professionals, who ‘have always wanted to have something of their own.’ Two of the owners are long steeped in the restaurant business, and the third is an Electrical Contractor and resident of Fairfield. Co-owners, Chef Vincent Mascaro, Managers Kosta Proskinitopoulos and Tomer Raviv have left no detail untouched in this American industrial mix style Bistro. They have created the Menu, the Bar Spirits, the handmade lighting, and décor’ and even the large table that seats up to 14 guests. Their hope is to get to know each and every guest personally and to have them stay and ‘feel comfortable hanging out’.
“We want to bring back what dinner used to be,” said Chef Mascaro. “When you sit down around the table and enjoy the people you’re with, take the time to decompress and enjoy relationships.”
Craft 260 boasts fresh daily deliveries of produce, seafood, meats and breads with which to create their exceptional menu.

Greens: Classic Caesar, Life Salad (baby kale, roasted sunflower & pumpkin seeds, seasonal berries, quinoa, shaved cucumbers, red onion, red peppers, pomegranate vinaigrette), Stout Marinated Steak Salad, Salmon (arugula, red onion, chick peas, smoked tomatoes, wood oven roasted salmon, white balsamic vinaigrette).
Eat With Your Hands: Classic or Craft 260 Burger, Ahi Seared Tuna (pickled red cabbage slaw, sliced avocado, shaved cucumber, toasted sesame seeds, ginger/sriracha aioli on toasted brioche), Mediterranean Marinated Chicken Breast, BLT, Veggie Entrée, Smoked chicken — each proudly served on Wave Hill Breads (local) with a side of hand cut fries.
Wood Oven Flatbreads: Margherita, Grilled Garlic Pesto Chicken, Roasted Mushroom and Chicken Sausage (tomato sauce, spicy chicken sausage, roasted garlic, oven dried tomatoes, pesto & parmesan), or a Baby Kale Salad.
Meals: Baked Mac & Cheese, Pot Pie, Salmon filet, Grilled marinated Hangar Steak, Wood Fire Roasted Chicken (beer brined ½ chicken, Za’Tar Spice, Potato Gratin, roasted fennel, smoked tomato-chicken).
Known for their Craft Brews (pilsners, lagers, IPA, pale ales, Belgians, stouts — including new Sour Stouts) Craft 260 has stepped things up — way up! Specialties include; Kentucky Straight Bourbon Whiskeys, Single Malt Scotch aged 8-21 years and numerous Authentic Craftwork Cocktails. Specialty Wines include Reds, Whites, and Prosecco along with monthly featured selections, and are available by the bottle or glass.
Bonus: Beer Dinners. Always popular prix fixe menu, beer dinners will be held each month and will feature a 4-course meal, each accompanied by a 6-ounce beer that will compliment that course’s flavors. The first will be held April 7th at 6pm and is sponsored by Sixpoint Brewery from Brooklyn, NY. Reservations are required prior to each dinner.
Reservations, take out, delivery ($25 min/up to 6 miles), homemade desserts, and a kids menu are also available.
